Baked cinnamon apple porridge

This is the perfect family breakfast for cool mornings. Make it the night before, bake it for half an hour the next morning and you have a healthy, warming and absolutely delicious breakfast or brunch at the ready.

Baked cinnamon apple porridge

Serves:

Ingredients

  • 2 Granny smith apples
  • 1 cup porridge oats (not instant)
  • 1 tsp ground cinnamon
  • 1 tsp baking powder
  • pinch of salt
  • 3 tbsp brown sugar
  • 1 tsp vanilla paste
  • 1 egg
  • 1 1/2 cup of milk
  • 1/2 cup walnuts

 

Method

Lightly grease a 4-cup capacity baking dish.

Slice (but don’t peel) the apple and arrange on the base of the dish.

Combine the oats with cinnamon, sugar and salt and tip this over the apples.

Whisk the egg, milk and vanilla paste together and pour this over the oats. Add a little more milk if the liquid hasn’t completely covered all of the oats.

If making this the night before, cover with plastic wrap and place in the fridge or cook in a moderate oven (180°C) for half an hour.

Notes

  • Swap the apples for bananas, berries or any other fruit you have on hand. Even dried fruit is good.
  • Mix the walnuts with pepitas and LSA mix or use hazlenuts and almonds.
