Stained glass window sandwiches

This easy sandwich recipe is a lovely way to ring the changes with the kids' lunch boxes when sandwich fatigue has set in. Use cookie cutters to cut the 'windows' from a slice of bread so that the filling shows through. Perfect for a party too!

Ingredients

  • 12 slices fresh bread

  • apricot, raspberry, blackberry or blueberry jam

    or other spreads of choice

  • peanut butter

    or other spreads of choice

  • butter or margarine

  • sprinkles

  • 1 Shape cutters (e.g. circles, stars, hearts, people)
  • 1 Knife

Instructions

  1. Remove crusts from all slices of bread.
  2. Spread six slices of the bread with your choice of jam or peanut butter.
  3. To make the sprinkles stick, you can add a thin layer of butter or margarine over the spread, then add the sprinkles.
  4. Using shape cutters, cut shapes from the centre of the remaining six slices of bread.
  5. Place the slices with the cut-outs on top of the spread-covered slices to create the stained glass window effect.
  6. Match up the small cut-out shapes to make little sandwiches as well.
  7. Serve on a large tray for maximum impact!
