Apricot topping

This is a great sauce for kids of all ages to have on desserts (leave out the honey for the under 1's)

Ingredients

  • 250g dried apricots

  • to cover water

  • 2 tbsp honey

Equipment

  • 1 small saucepan
  • 1 food processor or blender

Instructions

  1. In a small saucepan add apricot and enough water to cover.
  2. Leave to soak overnight.
  3. On a medium heat simmer the apricots until they are very soft.
  4. Drain cooking liquid and reserve.
  5. Puree the apricots in a food processor or blender. If they are a little dry you can add the honey or the reserved cooking liquid.
  6. Return to the saucpan and simmer until all is well combined and then you have the required consistency.

Notes

Tip
This is a great sauce for toddlers to have on desserts.
Tip
If you reduce it a little it makes a nice spread to go in between layers of cake.
Variation
Babies under 12 months should not be having honey due to the risk of botulinium so you can leave it out in this case.
