Ingredients
3 avocados
halved with seeds removed
4 slices middles rasher bacon
cooked and chopped
2 slices sourdough bread
toasted and cubed
1 grape tomatoes
halved
100g Danish feta
crumbled
½ cup basil leaves
shredded
1 lemon
juice of
2 tbsp olive oil
+ more for drizzling
salt and pepper

- 1 medium-sized bowl
Instructions
- Scoop avocado from 3 halves into a medium-sized bowl.
- Add bacon, cubed bread, tomatoes, feta and basil to the bowl.
- Toss mixture together gently with lemon juice, olive oil and seasoning.
- Scoop mixture into remaining avocado halves and drizzle with olive oil and season. Serve.
