Homemade cookies and cream ice cream

Whip up a batch of your own cookies and cream ice cream for a dessert recipe that's as good as it sounds. Homemade ice cream dotted with shards of shop-bought choc biscuits make this a easy dessert idea that the whole family will enjoy

Ingredients

  • 3 egg yolks

  • 400g sweetened condensed milk

  • 2 cups whipped cream

  • 2 tbsp water

  • 2 vanilla

  • 1 cup coarsely crumbled Oreos

    any other favourite biscuits

Equipment

  • 1 Large bowl
  • 1 Loaf pan
  • 1 Baking paper
  • 1 Whisk or electric mixer

Instructions

  1. In a large bowl, beat egg yolks, then stir in sweetened, condensed milk, water and vanilla.
  2. Fold in cookies and whipped cream.
  3. Pour into a loaf pan lined with baking paper, or other container of the same size.
  4. Cover and freeze for 6 hours or until firm.
  5. Scoop ice cream from pan or peel off baking paper and slice.

Variation
You can substitute Oreos with any other favourite crumbled biscuits.
Storage
Store covered in the freezer until firm.
