Orange cake with orange icing
- 250g butter, softened
- 250g castor sugar
- 4 eggs
- 1 tbsp orange zest
- 250g self-raising flour
- 100ml fresh orange juice
- 250g icing sugar
- 50ml orange juice
Preheat oven to 170C. Line a 22cm springform cake tin with baking paper.
Cream the butter and sugar until pale and thick. This will take a while.
Add eggs one at a time beating well after each one.
Add flour and zest and mix.
Slowly add orange juice until all incorporated.
Pour into cake tin and bake for 45 mins.
Stir orange juice into sifted icing sugar, making a thick paste. Spread on cooled cake.
