Strawberry and ricotta dessert pizza

This strawberry and ricotta dessert pizza is full of fresh fruity flavour and light-as-a-feather ricotta cheese that is drizzled with honey. It’s a perfect dessert!

Ingredients

  • cooking spray

  • 1 pizza base

  • ¼ cup honey

  • 250g ricotta cheese

  • 14 strawberries

    chopped

  • extra honey

    to drizzle

  • 1 oven
  • 1 pizza tray

Instructions

  1. Preheat oven to 240°C conventional (220°C fan-forced).
  2. Lightly oil a 30cm pizza tray with cooking spray.
  3. Place the pizza base on the tray and spread the honey over the base.
  4. Bake for 10-12 minutes or until golden.
  5. Spoon ricotta onto pizza base and scatter strawberries over the whole pizza.
  6. Drizzle a little honey over the ricotta and strawberries.
  7. Slice and serve.

Notes

Tip
I used full-fat ricotta on this pizza but you can use a low-fat version.
Variation
If you can get fresh figs they are a delicious stand-in for strawberries in this recipe.
