Easy crumbed fish

It's really easy to crumb your own fish and this recipe shows you how. Perfect for any firm, white fish, serve with chips and lemon.

Ingredients

  • 300g firm white fish

    fillets

  • 1 pinch white pepper

  • 1 tsp salt

  • 1 cup corn starch

  • 1 egg

    lightly beaten

  • 1 cup breadcrumbs

  • Vegetable oil

    for deep frying

  • ½ lemon

    cut into wedges

  • 1 large wok

Instructions

  1. Cut the fish fillets into 2cm-thick slices.
  2. Add the cornflour to the beaten egg and beat together gently.
  3. Add the fish pieces to the batter and then to the crumbs.
  4. Heat the oil to medium in a large wok.
  5. Fry the fish to golden, about two minutes, then drain well season with white pepper and salt and a squeeze of lemon.
