Beef kofta with raita

A great option for your next BBQ, these beef koftas with a homemade raita dip taste delicious. Mix some mince with tomato sauce if your little ones don't like the spices.

Ingredients

  • ½ cup fresh continental parsley leaves

    loosely packed

  • ½ cup fresh coriander leaves

    loosely packed

  • 1 onion

    quartered

  • 500g lean beef mince

  • 1 tsp ground coriander

  • 1 tsp ground cumin

  • 1 tsp ground mild paprika

  • 0.5 tsp ground allspice

  • salt and freshly ground black pepper

  • 8 metal or wooden skewers

  • 200ml set low-fat natural yoghurt

    For Raita

  • 1 cucumber

    peeled, deseeded and finely chopped, for Raita

  • 0.5 tsp ground cumin

    For Raita

  • olive oil spray

Equipment

  • 1 baking tray
  • 1 foil
  • 1 food processor
  • 1 skewers
  • 1 small bowl
  • 1 grill

Instructions

  1. Line a large baking tray with foil. Place parsley, fresh coriander and onion in the bowl of a food processor, whiz until finely chopped.
  2. Add mince and spices and whiz until well combined and smooth.
  3. Divide the mince mixture into eight equal portions. Use your hands to mould the mixture around a skewer into a sausage shape.
  4. Place on the prepared tray and repeat with remaining beef mixture and skewers.
  5. To make the raita, combine the yoghurt, cucumber and cumin in a small bowl and set aside.
  6. Preheat grill to medium-high. Spray the kofta with olive oil and cook under the grill until browned.
  7. Turn carefully and cook for another 3-4 minutes or until browned and cooked through.
  8. Serve kofta with steamed rice and raita side dish.

Notes

Tip
The easiest way to deseed cucumbers is to cut them in half lengthways and use a teaspoon to scoop out the seeds.
Variation
For fussy eaters, set aside a quarter of the mince, squirt in a tablespoon of tomato sauce, mix it up and make two very plain koftas.
