Chicken BLT's

eat for picnics these chicken BLTs are easy to make and store before you head out. Also perfect for lunchboxes

Ingredients

  • 4 soft torpedo rolls

  • 2 cups BBQ chicken

    shredded

  • 4 bacon

    cooked until crisp

  • 2 tomatoes

    thickly sliced

  • 2 handfuls cos or iceberg lettuce

    washed and dried

  • 4 tbsp good quality egg mayonnaise

    Instructions

    1. Cut along each roll twice.
    2. For each roll, spread one pocket with mayonnaise and top with some chicken.
    3. Fill the remaining pocket with bacon, tomato and lettuce.

    Tip
    Great for picnics: make in advance and keep cool or resealable bag everything and assemble at your destination.
