Avocado salsa dip with corn chips

This is a great yummy way to get kids to eat healthy avocado, especially if it comes with corn chips it's a win win for the family.

Ingredients

  • 2 ripe avocados

  • 1 tbsp lemon juice

  • 0.5 jar mild salsa

    from a 375g jar

  • corn chips

    to serve

Equipment

  • 1 small knife
  • 1 large metal spoon
  • 1 mixing bowl

Instructions

  1. Cut avocados in half. Remove the stone by putting the avocado down on a bench, hitting it with the blade of a small knife and then twisting the knife to remove the stone. Use a large metal spoon to scoop flesh out.
  2. Combine avocado, lemon juice and salsa in a mixing bowl and mash together. I mash lightly to keep some avocado chunks in this dip, gives it some texture and keeps some green.
  3. Serve with corn chips.

Notes

Variation
If you love your salsa, by all means use the whole jar.
Variation
Make this a gluten-free snack with gluten free corn chips (available in the health food section of your supermarket).
Variation
Add a pinch of cayenne Pepper just to give it a little kick of heat.

    I love this recipe, so simply and easy but the taste is amazing. I add a pinch of cayenne Pepper just to give it a little kick of heat.
