Barbecue bean stew



  • 3 tsp olive oil
  • 2 onions, finely sliced
  • 2 carrots, finely chopped
  • 2 celery stalks, finely chopped
  • 4 garlic cloves, minced
  • 1 pinch salt
  • 3 x 400g cans of 4 bean mix
  • 3 cups (750ml) beef-style stock
  • 1/3 cup (70g) dark brown sugar
  • 1 tbsp Worcestershire sauce
  • 2 tbsp barbecue sauce
  • 1/2 cup chopped parsley


Preheat oven to 180å¡C (160å¡C fan-forced).

Heat oil in flameproof casserole dish and add onions, carrots, celery and garlic with a small pinch of salt.

Cook on low for 8 minutes or until soft.

Add beans, stock, sugar, Worcestershire and barbecue sauces and bring to the boil.

Reduce heat, cover with a lid and place in the oven to cook for 2 hours.

Serve in bowls with a sprinkling of fresh parsley.
