Cake mix apple and oat muffins

Try this cheaty muffin recipe when you want something quick and healthy for the kids' lunch boxes. Adding fresh apple and oats to a cake mix is an easy way to make sure you have a sweet treat to hand when time is of the essence.

Ingredients

  • 2 eggs

  • ⅔ cup milk

  • 2 red apples

    grated

  • ½ cup one minute oats

  • 380g vanilla cake mix

  • 3 butter or margarine

    melted

Equipment

  • 1 bowl
  • 1 muffin tin
  • 1 patty cases

Instructions

  1. Preheat oven to 180C.
  2. Prepare muffin tin with 10 patty cases and set aside.
  3. In a bowl lightly beat 2 eggs and milk. Stir in apples and oats.
  4. Add vanilla cake mix and butter/margarine.
  5. Stir until just combined.
  6. Pour 1/4 cup measures into muffin patty cases.
  7. Bake for 20-25 mins.

This is really quick cheat to use a cake mix and economical.
