Healthy glazed meatballs

Meatballs are popular with everyone in the family. These lovely healthy meatballs are cooked in a tasty Asian-style glaze and will appeal to the kids. Give them a fork and let them get to it!

Ingredients

  • 500g extra lean beef

  • 1 clove garlic

    minced

  • 2 tsp freshly grated ginger

  • ½ tsp salt

  • 2 spring onions

    finely chopped

  • 1 egg

    lightly beaten

  • 1 cup panko breadcrumbs

  • ¼ cup soy sauce

    (60ml)

  • ¼ cup oyster sauce

    (60ml)

  • ½ cup orange juice

    (125ml)

  • 2 tbsp honey

  • 2 tsp sesame oil

  • 2 tsp freshly grated ginger

  • 1 clove small garlic

    minced

  • 1 oven tray
  • 1 baking paper
  • 1 small saucepan
  • 1 mixing bowl

Instructions

  1. Heat oven to 210°C (190°C fan-forced) and line an oven tray with baking paper.
  2. Mix meatball ingredients together and roll 1 tablespoon of mixture for each meatball.
  3. Place on the oven tray and bake for 10 minutes.
  4. Place glaze ingredients into a small saucepan and bring to a boil.
  5. Reduce heat and simmer for 5 minutes.
  6. Remove meatballs from the oven and pour a teaspoon of glaze over each meatball.
  7. Continue to bake for a further 10 minutes.
  8. Remove meatballs from the oven and toss through the remaining glaze.
  9. Serve on a salad, steamed vegetables, rice noodles, rice or a combination of any of these.

Tip
Using lean mince keeps the fat and calories down.
Tip
Make twice as many and send meatballs along in a lunchbox the next day.
