Rice and lentil dinner

Rice and lentils are a very nutritious combo for little people. Make sure to cook them well so there are no tummy aches later, and then puree well. With carrots and apple added in, this meal has everything your baby needs.

Ingredients

  • 1 cup brown rice

  • 1 cup lentils

  • 2 carrots

  • 1 apple

Equipment

  • 1 saucepan
  • 1 food processor
  • 1 blender

Instructions

  1. Cook brown rice and lentils according to package directions.
  2. In a small saucepan combine small pieces of chopped apples and carrots (you may also add a bit of onion and celery).
  3. Add enough water to just cover.
  4. Cook until tender, reserving water.
  5. Combine rice, lentils, apples, and carrots in food processor or blender.
  6. Puree, adding reserved water until the mixture is the desired consistency, for smaller babies or chop as needed for the older toddler/ baby.

Notes

Tip
For smaller babies, puree until smooth. For older toddlers, you can chop the mixture to introduce more texture.
Variation
You may also add a bit of onion and celery with the apples and carrots for extra flavor.
