Sticky Pineapple Chicken drums

Everyone loves sticky drumsticks. Fresh pineapple retains its crunch and gives a burst of sweetness each bite. Vary the amount of chilli to suit your own taste.

Ingredients

  • 1 tbsp olive oil

  • 8-10 chicken drumsticks

  • 3 tbsp soy sauce

  • 1 cup runny honey

  • 1 tbsp sweet chilli sauce

  • 3 cloves garlic

    minced

  • 1 tbsp tamarind puree

    or tomato paste

  • 1/2 pineapple

    skin cut off, chopped into pieces

  • 2 toasted sesame seeds

  • 1 Baking dish
  • 1 Baking paper
  • 1 Mixing bowl
  • 1 Oven

Instructions

  1. Preheat oven to 190°C.
  2. Place chicken in a baking dish in a single layer (line with baking paper to make cleaning easier).
  3. Mix all other ingredients together and pour over chicken, coating each piece well.
  4. Bake in oven for 40 minutes, turning once, until the chicken is cooked and the sauce is reduced and sticky. Sprinkle with sesame seeds.
  5. Serve hot.

Notes

Tip
Line the dish with baking paper for easier cleanup.
Tip
Turn the chicken halfway through to ensure even glazing.
Variation
Substitute tamarind puree with tomato paste if unavailable.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
