Swedish chocolate balls

These Swedish chocolate balls were introduced to us by a Swedish friend. They are made from oats and cocoa and then rolled in delicious coconut. The kids will love to help with these.

Ingredients

  • 100g butter

  • 2 cups rolled oats

  • 3 tbsp caster sugar

  • 1 tbsp cocoa powder

  • 1 tsp vanilla extract

  • 1 tbsp water or coffee

  • 1 cup desiccated coconut

    plus extra for rolling

  • 1 large bowl

Instructions

  1. Melt the butter then place in a large bowl. Add all the remaining ingredients (oats, sugar, cocoa, vanilla, water/coffee, and 1 cup of coconut) and mix well.
  2. Roll this mixture into small balls, about the size of a walnut, then roll each one in the extra coconut to coat.

Notes

Variation
You can swap half a cup of the oats with finely chopped dried fruit if you prefer.
Variation
A few finely chopped hazelnuts is another good addition to this beautifully simple recipe.
Storage
Store in the fridge for up to a week.
