Rice pudding

There's something very comforting about this classic nursery food recipe - the creamy softness of the rice, the sweet warmth of the vanilla and sugar and the unexpected raisins

Ingredients

  • 2 cups cooked rice

  • ½ cup caster sugar

  • 2 eggs

    slightly beaten

  • 2 cups milk

  • 1/2 vanilla

  • ¼ cup raisins

  • 1/2 tsp ground cinnamon

Equipment

  • 1 oven
  • 1 bowl
  • 1 baking dish or pan
  • 1 plastic wrap

Instructions

  1. Preheat oven to 175C.
  2. Place rice in bowl, add all ingredients, stir to mix.
  3. Pour into greased baking dish or pan. Bake about 25 minutes.
  4. Place plastic wrap on top of warm rice pudding and place in fridge to cool.
