Sausages with spiralli

This lovely pasta dish is quick to make and packed full of flavour thanks to the beef sausages, broccoli and hint of chilli. Make sure you get top quality snags to make the most of this yummy dinner.

Ingredients

  • 500g beef sausages

    plain or flavoured

  • 2 tbsp olive oil

  • 1 spanish onion

    finely chopped

  • 2 cloves garlic

    crushed

  • 1 broccoli

    about 200g, cut into florets

  • 1 red chilli

    seeds removed, finely chopped (optional)

  • 250g spiralli pasta

  • 100g tomato pesto

  • 2 tbsp fresh flat-leaf parsley

    chopped

  • freshly grated parmesan cheese

    to serve

  • 1 large non-stick frypan
  • 1 large pot

Instructions

  1. Heat a large non-stick frypan and cook sausages over medium heat.
  2. Remove to a plate.
  3. Heat oil in pan and cook onion until soft, add garlic and cook for another minute.
  4. Add broccoli and chilli (if using) to pan and cook for about 5 minutes until bright green and just tender.
  5. Slice sausages, add to pan and heat through.
  6. Meanwhile, cook the pasta in a large pot of water following packet directions or until al dente.
  7. Drain pasta, stir in tomato pesto, then sausage mixture.
  8. Serve with parmesan.
