Potato scones

A variation on the traditional recipe, these scones made with potatoes are a delicious savoury treat. Best eaten warm with lashings of butter.

Ingredients

  • 250g potatoes

    peeled

  • 30g butter

    softened

  • 2 castor sugar

  • 1 egg

    lightly beaten

  • ½ cup cream or milk

  • 2½ cups self-raising flour

    sifted

  • 1 Oven
  • 1 Pot or Steamer
  • 1 Potato masher
  • 1 Mixing bowl
  • 1 Rolling pin
  • 1 5cm plain cutter
  • 1 Baking tray

Instructions

  1. Preheat the oven to hot 210 degrees C.
  2. Steam or boil the potatoes for 15-20 minutes or until tender.
  3. Drain, cool, and mash.
  4. Cream the butter and sugar, then beat in the potato, egg and cream.
  5. Place the flour in a bowl, make a well in the centre and add the potato.
  6. Mix together to form a soft dough, adding extra cream if needed.
  7. Turn onto a floured board and form into a smooth ball.
  8. Roll out to 2 cm thick and cut out rounds with a floured 5cm plain cutter.
  9. Place on a greased baking tray, glaze with milk and bake for 10-12 minutes.
