Macadamia-crusted Fish

The crumb mix keeps the fish moist and delicious. The delicate flavour of macadamia nuts doesn't overpower the fish and it also adds a great crunch. Serve it with wedges of lime for tang.

Ingredients

  • 1/2 loaf vienna bread

  • 1 orange

    zest of

  • 1 handful parsley

  • ⅓ cup orange juice

  • ⅓ cup butter

    melted

  • 1 cup macadamias

  • 2 fillets white fish

    sliced in half

  • 1 oven
  • 1 baking tray
  • 1 baking paper
  • 1 food processor

Instructions

  1. Preheat oven to 180°C. Cover a baking tray with baking paper and set aside.
  2. In a food processor place the bread and zest. Pulse until it resembles crumbs.
  3. Add parsley and macadamias. Pulse to just crush the macadamias.
  4. Pour in the orange juice and butter and pulse until just combined.
  5. Press the crumb mixture onto the fish.
  6. Bake for 20-25 minutes.
  7. Serve with a green salad and wedges of lime to squeeze over the fish.

Tip
This is so simple but just tastes delicious.

Make sure the macadamias are not processed too much. They need to still have a good crunch.
