Promotion for Hellers
For this simple but tasty tray bake, start with Hellers Cheesymite Sausages and tender potatoes and then add whatever is available in the fridge. We’ve used capsicum, red onion, bacon, and baby spinach but this works great with broccoli or cauliflower florets, baby beets, or kumara.
Sausage and potato tray bake
A firm family favourite and superb for using up leftovers from the fridge.
Ingredients
- 8 Hellers Cheesymite Sausages
- 2 tbsp olive oil
- 6 washed white potatoes medium-sized
- 4 rashers bacon
- 1 red onion
- 2 capsicums
- 150g baby spinach
- 1 can corn drained
- 100g feta cut into cubes
- 1 tsp smoked paprika
- black pepper
Instructions
- Heat a tablespoon of oil in a frying pan
- Slice the sausages into bite-sized pieces and pan fry for 2-3 minutes over a medium heat.
- Cut the bacon into 2-3cm pieces and add to the sausages. Cook until sausages and bacon are starting to brown, then remove from the heat.
- Bring a pot of water to the boil
- Wash the potatoes and cut into bite-sized pieces. Add to the pot and cook on a low boil until just tender then drain
- Peel the red onion and slice into wedges
- Deseed the capsicums and cut into chunks
- Grease a large shallow baking dish and heat the oven to 180 degrees
- Add potatoes to the dish and sprinkle with paprika and black pepper
- Add sausages and bacon, red onion, capsicum, baby spinach, corn and feta
- Drizzle with a little olive oil and cook in the oven for 12-15 minutes
