Leftover day rice salad

This salad is perfect for when you have leftover boiled rice from the day before. Pop in any other leftovers you have in the fridge and you have a budget-friendly dinner ready to go.

Ingredients

  • 2 large leftover sausages

    cooked

  • 2 cups leftover roast vegetables

  • 2 cups cooked rice

  • 0.5 red onion

    finely chopped (optional)

  • 2 tbsp balsamic vinegar

  • 2 tbsp fresh continental parsley

    chopped

  • 2 tbsp fresh basil

  • 1 microwave
  • 1 large bowl

Instructions

  1. Reheat the sausages, vegetables and rice in the microwave. You can do each item separately in the container it emerged from the fridge.
  2. Combine warmed ingredients in a large bowl, stir through onion, vinegar and parsley.
  3. Serve immediately garnished with basil ripped into small pieces.

Variation
Obviously, you can throw all sorts of things into a rice base like this and end up with a tasty, healthy and nutritious meal. And clean a whole heap of leftovers out of the fridge.
