Wholesome breakfast smoothie

The kids will love this wholesome breakfast smoothie - especially those who aren't keen on a big brekkie. This liquid meal is packed to brim with nutritious ingredients and will keep them full and satisfied until recess.

Ingredients

  • 4 dried apricots

    soaked

  • 2 dried dates

    seeds removed

  • 1 tsp chia seeds

  • 2 tbsp oats

  • ½ tsp vanilla extract

  • 1 cup almond milk

    250ml

  • 1 small banana

  • 1 bowl
  • 1 blender
  • 1 cups
  • 1 straws

Instructions

  1. Put apricots, dates and chia seeds into a bowl and cover in boiling water. Allow to stand for 10 minutes or until apricots and dates look plump.
  2. Pulse oats in a blender, then add drained dried fruit and seed mixture.
  3. Add vanilla, milk and banana to the blender and blend really well into a smoothie.
  4. Serve in fun, colourful cups with party straws.

Notes

Tip
If the chia seeds make the smoothie too bulky, just add some extra milk or water.
Variation
For fussy toddlers, use half almond milk and half full cream dairy milk for a creamier taste.
Variation
Add a little Milo for extra kid-appeal.
Storage
Best consumed immediately after blending.
