Zucchini slice

Simple, healthy and oh-so-easy, this zucchini slice recipe makes a quick dinner or healthy lunch box snack. It’s also great for using up whatever’s left in the fridge at the end of the week.

Ingredients

  • 375g zucchini

    coarsely grated

  • 1 onion

    finely chopped

  • 1 cup self-raising flour

    sifted

  • 5 eggs

    lightly beaten

  • 3 bacon

    finely chopped

  • 1 cup cheddar cheese

    grated

  • ½ cup oil

  • salt and pepper

    to taste

  • 1 lamington tin
  • 1 grater
  • 1 mixing bowl
  • 1 knife

Instructions

  1. Grate zucchini coarsely.
  2. Finely chop onion and bacon.
  3. Combine zucchini, onion, bacon, cheese, sifted flour, oil & lightly beaten eggs.
  4. Season with salt and pepper and pour into a well-greased lamington tin.
  5. Bake in a moderate oven for 30 to 40 minutes or until browned.
