Cheesy Potato Bake

This cheesy potato bake is easy to make and a tasty accompaniment to a BBQ chicken and salad. Using plenty of cheese and cream, the recipe also includes a little fried bacon to give it an extra crunch.

  • We ate this wonderful bowl of comfort food with our favourite local BBQ chicken and some steamed green vegetables.
  • I used half low-fat milk and half cream in a feeble attempt to reduce calories.
  • The recipe would work just as well with low fat milk.

Ingredients

  • 1 kg Potato

    peeled and chopped into cubes

  • 1 tsp Olive Oil

  • 1 Onion

    finely chopped

  • 2 rashes Bacon

    rind removed and chopped

  • 200 ml Milk or Cream

  • Salt and Freshly Ground Pepper

  • 1 cup Grated Cheese

  • Thyme

Equipment

  • 1 Saucepan
  • 1 Large frying pan
  • 1 Large ovenproof dish

Instructions

  1. Place potatoes in saucepan, cover with water and boil until cooked.
  2. While potatoes are cooking, heat olive oil in a large frying pan and cook onion and bacon until starting to brown.
  3. Drain potatoes, then add onion and bacon mixture, cream (or milk) and season with salt and pepper.
  4. Stir well and then transfer into a large ovenproof dish.
  5. Sprinkle with grated cheese.
  6. Bake for 30 minutes or until top is golden brown.
  7. Stand for 5 minutes, garnish with thyme
