These tomato roasted zucchini are covered in a melted cheese and are a great side dish to chicken or veal schnitzel. Baking zucchini like this keeps them moist and flavourful and is a easy way to increase the vegetable intake for your family.

Ingredients

  • 1 kg zucchini

    thickly sliced

  • 4 tbsp basil

    chopped

  • 500 ml passata

  • 60 grams cheese

    grated

Equipment

  • 1 baking dish
  • 1 foil or lid

Instructions

  1. Preheat oven to 180°C.
  2. In a baking dish, lay zucchinis and sprinkle over chopped basil.
  3. Pour over passata and sprinkle with cheese.
  4. Cover with foil or a lid and bake for 30 minutes.

Notes

I like to sprinkle a little garlic salt or garlic powder over these zucchini for extra flavour
