Ingredients
1 vanilla cake mix
1 cup desiccated coconut
3 tbsp melted butter
heaped
1 pie apples
200g sour cream
1 egg
Equipment
- 1 square cake tin
Instructions
- Combine cake mix with coconut and melted butter. The mixture appears a little dry, but don’t worry it’s meant to be like this.
- Press into a square cake tin and bake for around 10 minutes in a moderate oven.
- Place the pie apples on top of the cake base whilst still warm.
- Combine sour cream with a beaten egg and spread on top.
- Dust with cinnamon or coconut, whichever you prefer (cinnamon is best for presentation).
- Return to oven and bake for around 20 minutes.
- Allow to cool (the sour cream topping will set), refrigerate and slice into smallish pieces as it is quite a rich slice.
