Lemon cordial

This delicious lemon cordial lasts for up to 4 months in the fridge and you only require 1/3 of the amount of shop bought cordial what a great way to use up all of those extra lemons on your or the neighbours tree

Ingredients

  • 10 lemons

    large

  • 1.5kg sugar

  • 4 cups water

  • 10g epsom salts

  • 10g citric acid

  • 10g tartaric acid

Equipment

  • 1 juicer
  • 1 strainer
  • 1 saucepan
  • 1 sterilised bottles

Instructions

  1. Squeeze and strain juice of lemons.
  2. Heat the sugar and water until sugar dissolves.
  3. Mix all ingredients together, strain.
  4. Pour into prepared sterilised bottles.

Notes

Tip
You will need only 1/3 of the amount of shop bought cordial.
Variation
You can also use oranges/grapefruit instead or do 50/50 orange and lemon.
Variation
I have also made lime cordial. When making lime, double the amount of fruit (20 limes).
Storage
This will keep well in fridge for up to 4 months.
