Bells of St Clements muffins

Just like the nursery rhyme, these muffins are filled with yummy orange and lemon flavours. They make a zingy afternoon snack or lunch box treat. They can also be made gluten free.

Ingredients

  • 2 cups plain flour

    can be substituted with gluten-free plain flour

  • 2 baking powder

  • ½ cup caster sugar

  • 1 zest of orange

    finely chopped

  • 1 zest of lemon

    finely chopped

  • 1 cup orange juice

    (250mL)

  • ⅓ cup oil

  • 2 eggs

  • 1 muffin pan
  • 1 muffin paper cases
  • 1 bowl
  • 1 jug
  • 1 whisk
  • 1 skewer
  • 1 wire trays

Instructions

  1. Preheat oven to 180C. Place muffin paper cases into muffin pan.
  2. Sift flour and baking powder into a bowl, stir in sugar and zests.
  3. Combine juice, oil and eggs in a jug, whisk to combine.
  4. Pour liquid into dry ingredients and mix until just combined.
  5. Spoon muffin mixture into muffin pans and bake for 20-25 minutes until a skewer inserted into the centre comes out clean.
  6. Cool on wire trays.

Variation
Make these gluten-free using gluten-free plain flour and baking powder.
