Meatball & Tzatziki Wraps

Both the meatballs and tzatziki are easily made ahead of time. The meatballs can be frozen and then cooked to order and the tzatziki will last a day or two in the fridge.

Ingredients

  • 1 onion

    very finely chopped

  • 1 clove garlic

    finely chopped

  • 500g beef mince

  • 0.5 tsp dried oregano

  • ¾ cup fresh breadcrumbs

  • 1 tbsp tomato sauce

  • 1 egg

  • ½ cup plain yoghurt

    for tzatziki, the thicker the better

  • 1 clove garlic

    for tzatziki, finely chopped

  • 2 fresh mint

    for tzatziki, chopped

  • 1 generous pinch salt

    for tzatziki

  • 4 Tip Top Supersoft or Oatilicious wraps

  • 1 large handful shredded lettuce

  • 0.25 telegraph cucumber

    sliced into wedges

  • 1 drizzle tomato sauce

    optional, for serving

Equipment

  • 1 bowl
  • 1 frying pan
  • 1 small bowl
  • 1 paper towels

Instructions

  1. Combine the onion, garlic, mince, oregano, breadcrumbs, tomato sauce and egg in a bowl and mix well. If the mixture is too wet to form into balls then add some more breadcrumbs. Season with salt and pepper.
  2. Form the mixture into walnut sized balls.
  3. Heat a film of oil in a frying pan and cook meatballs until well coloured and cooked through. Drain on paper towels.
  4. Mix the tzatziki ingredients (yoghurt, garlic, mint, salt) together in a small bowl.
  5. Distribute the lettuce between the wraps and then top with 3 meatballs, a sprinkling of cucumber and a drizzle of yoghurt and tomato sauce.
  6. Fold in the ends and wrap into a parcel.

Notes

Tip
Recipe makes 24 meatballs.
