1 cup rolled oats
1 cup rice bubbles
1 cup dried fruit
1 cup honey
125g butter
4 Weet-Bix
crushed
1 cup coconut
3 cups brown sugar
1 cup peanut butter

Instructions
- Grease a 19x29cm lamington pan.
- Combine oats, rice bubbles, Weet-Bix, coconut and fruit into a large bowl.
- Combine sugar, honey, butter, and peanut butter in a saucepan. Stir constantly over heat without boiling, until the butter is melted and sugar is dissolved.
- Bring the mixture to a boil, then reduce the heat and simmer for five minutes, stirring constantly until it thickens.
- Stir the honey mixture into the dry ingredients. Press evenly into the prepared tin.
- Cut into squares while warm and then refrigerate to set.
