Fruit and honey muesli bars

These fruit and honey muesli bars are sweet and chewy and great for an after-school snack. Make it on the weekend so the kids' snack are sorted for the upcoming week.

Ingredients

  • 1 cup rolled oats

  • 1 cup rice bubbles

  • 1 cup dried fruit

  • 1 cup honey

  • 125g butter

  • 4 Weet-Bix

    crushed

  • 1 cup coconut

  • 3 cups brown sugar

  • 1 cup peanut butter

  • 1 19x29cm lamington pan
  • 1 Large bowl
  • 1 Saucepan

Instructions

  1. Grease a 19x29cm lamington pan.
  2. Combine oats, rice bubbles, Weet-Bix, coconut and fruit into a large bowl.
  3. Combine sugar, honey, butter, and peanut butter in a saucepan. Stir constantly over heat without boiling, until the butter is melted and sugar is dissolved.
  4. Bring the mixture to a boil, then reduce the heat and simmer for five minutes, stirring constantly until it thickens.
  5. Stir the honey mixture into the dry ingredients. Press evenly into the prepared tin.
  6. Cut into squares while warm and then refrigerate to set.

Will keep for one week in an air tight container.
