Mini burgers

These little mini hamburgers are so much fun and perfect for little hands to hold! They taste even better if add bacon to your burger! These would be perfect for a weekend dinner!

Ingredients

  • 500g beef mince

  • 2 tbsp water

  • 2 tbsp tomato paste

  • ½ cup breadcrumbs

  • 8 slices cheese

  • 250g cherry or grape tomatoes

    sliced

  • 1 cup baby spinach leaves

  • 5 slices bread

Equipment

  • 1 non-stick frypan
  • 1 scone cutters
  • 1 mixing bowl

Instructions

  1. Combine mince, water, tomato paste and breadcrumbs and mix well.
  2. Form 2 tablespoons of mixture into mini burgers, you will make about 20.
  3. Heat a non-stick frypan to medium heat and cook burgers in two batches.
  4. Cook for 3-4 minutes each side and turn only once.
  5. Use scone cutters to cut 4 circles out of each slice of bread.
  6. Top each round of bread with a spinach leaf or two, a small piece of cheese, a burger and a slice of tomato.
  7. Serve with tomato sauce.

Notes

Tip
For fun, if it is Valentine's Day time of the year, use a heart shape cutter for the bread. A simple change of shape can make food more appealing to kids.
Variation
To reduce fiddling around, make half a batch of mini burgers and the rest adult-sized.
Variation
Add leftover cooked bacon and onion to the mixture for grown-up burgers.
