Ingredients
2 zucchini
sliced
150g green beans
cut into thirds
3 cups cooked brown rice
2 x 185g cans tuna
drained
2 tsp parsley
2 tbsp fresh orange juice
1 tsp finely grated orange rind
2 tbsp olive oil
2 tsp white wine vinegar
Salt and pepper
to taste

Instructions
- To make the dressing, whisk together dressing ingredients, set aside.
- Boil or steam the zucchini and beans for 2 minutes. Drain and set aside.
- Mix tuna, rice, beans and zucchini together, add the dressing and toss.
