Zucchini, Tuna, Orange & Rice Salad

This healthy salad is made into a hearty meal thanks to the addition of tuna and rice. Just add zucchini and a zingy citrus dressing for a salad recipe that's great for lunch, dinner or as a take-along meal in a lunch box.

Ingredients

  • 2 zucchini

    sliced

  • 150g green beans

    cut into thirds

  • 3 cups cooked brown rice

  • 2 x 185g cans tuna

    drained

  • 2 tsp parsley

  • 2 tbsp fresh orange juice

  • 1 tsp finely grated orange rind

  • 2 tbsp olive oil

  • 2 tsp white wine vinegar

  • Salt and pepper

    to taste

  • 1 Whisk
  • 1 Mixing bowl
  • 1 Pot or Steamer
  • 1 Colander

Instructions

  1. To make the dressing, whisk together dressing ingredients, set aside.
  2. Boil or steam the zucchini and beans for 2 minutes. Drain and set aside.
  3. Mix tuna, rice, beans and zucchini together, add the dressing and toss.
