Warm chicken, avocado and mango salad

This is a fantastic salad to serve when you have guests. It is a whole meal on one plate, looks really pretty, you can do most of the work ahead of time

Ingredients

  • 500g chicken thighs

    cut into bite-sized pieces

  • 1 tbspn lemon pepper seasoning

    Masterfoods brand suggested

  • 1 whole lemon

    squeezed

  • 1 tbspn olive oil

  • 2 whole ripe avocados

    sliced finely

  • 2 whole ripe mangoes

    cut into cubes

  • 2 large handfuls rocket

    washed

  • 2 tbspn fresh mint

    torn roughly

  • 1 tspn mild mustard

    for dressing

  • 1 tbspn honey

    for dressing

  • 2 tbspn balsamic vinegar

    for dressing

  • ¼ cup vegetable oil

    for dressing

Equipment

  • 1 bowl
  • 1 small container with lid
  • 1 barbecue or frying pan
  • 1 serving platter
  • 1 salad utensils

Instructions

  1. In a bowl, mix together the chicken pieces, lemon juice, olive oil and lemon pepper seasoning. Allow to marinate in the fridge for 1-2 hours.
  2. To make the dressing, mix together all the dressing ingredients in a small container with a lid. Close and then shake well to combine.
  3. Heat barbecue or frying pan until hot then add the chicken pieces. Cook for four minutes on one side and then turn over and continue cooking until they are completely cooked through. Remove from heat and set aside.
  4. On a serving platter, scatter the washed rocket and mint, then the mango and avocado. Using salad utensils, toss lightly then add the chicken pieces and a little of the dressing. Toss again and serve immediately.

Notes

Tip
Use 1 tsp lemon rind, 1/2 tsp pepper and salt if you don't have lemon pepper seasoning.
Tip
Marinating longer than 2 hours is fine, though chicken may change color due to acidity.
Variation
Great as a whole meal for guests.
Storage
Serve immediately while chicken is warm.
