Easy egg pikelets

These easy egg pikelets will have even the fussiest of eaters begging for more! Light, fluffy and SO moreish, these little bites are great for after-school snacks or served alongside some streamed veggies for an easy-peasy kids' dinner.
Easy egg pikelets

Ingredients

  • 2 eggs

  • ¼ cup pouring cream

  • 2 tbsp wholemeal flour

Equipment

  • 1 medium mixing bowls
  • 1 whisk
  • 1 frying pan
  • 1 paper towel

Instructions

  1. Separate the egg whites from the yolks and place each in separate medium mixing bowls.
  2. Mix cream and flour with egg yolks, season and set aside.
  3. Whisk the egg whites into stiff peaks then fold through the egg yolk mixture.
  4. Bring a frying pan to medium heat and spray with coconut oil spray, or wipe some butter around the base and sides with a piece of paper towel.
  5. Dollop tablespoons of pikelet batter into the pan. Cook for one minute then, very gently, flip and cook for a further minute, and serve.

Notes

Tip
Alongside some steamed veggies or quickly boiled frozen peas and corn, this would be a very suitable quick and simple dinner for fussy little ones.
Variation
Add grated cheese or finely shredded ham to the egg mixture, if you fancy.

    This pikelet recipe is horrible. Don’t make it it just tastes like flat scrambled egg… was a disappointment for the kids who helped make it.
