Leftover sausage bake recipe

This tasty casserole is such a great recipe for using up leftover sausages when you've over catered at a barbecue. A perfect oven bake that combines snags with pasta and tomatoes to make an easy, nutritious family meal. Mmm

Ingredients

  • 300g short pasta

  • 1 tbsp olive oil

  • 1 clove garlic

    crushed

  • 1 red capsicum

    finely diced

  • 1 zucchini

    thickly sliced and quartered

  • 8 leftover sausages

    chopped

  • 420g jar pasta sauce

  • 400g can crushed tomatoes

  • 1 cup grated tasty cheese

  • 1 heavy-based frying pan
  • 1 casserole dish
  • 1 oven

Instructions

  1. Cook pasta and drain.
  2. Preheat oven to 180°C conventional or 160°C fan forced.
  3. Heat olive oil in a heavy-based frying pan. Saute garlic, red capsicum and zucchini until softened.
  4. Toss through pasta, sausages, pasta sauce and crushed tomatoes.
  5. Pour into a casserole dish and top with grated cheese. Cook for around 30 minutes until cheese is melted and golden.
  6. Serve with a salad.

Tip
Serve with a salad.
Variation
If you need to make this stretch further, stir through some drained red kidney beans before popping in the oven.
Variation
Add a gentle heat with the addition of a little chopped chilli.
