Sausages with fruity salad

Give BBQ sausages a fruity twist with this out-of-the-box dish.

Sausages with fruit? Absolutely! BBQ the sausages and grill the fruit slices for a tasty change to your BBQ basics.

Ingredients

  • 8 sausages

  • 1 tsp olive oil

  • 2 apples

    cored peeled and sliced

  • 2 nectarines

    de-stoned, sliced

  • ½ cup pecans

    optional

  • 1 sprig of fresh rosemary

    separated from the stem

  • knob of butter

Equipment

  • 1 BBQ
  • 1 Pan
  • 1 Heavy-duty foil

Instructions

  1. Cook sausages on the BBQ or pan-fry until browned on all sides and cooked through. If you have very meaty sausages, this may take 15 minutes.
  2. Meanwhile, using two layers of heavy-duty foil, place half of the apples, nectarines, pecans (if using), rosemary and butter into the centre of the foil and seal the foil 'packet'. Repeat with a second packet.
  3. BBQ (or oven bake) on medium heat for about 15-18 minutes until apples are cooked to your liking. Open carefully as it will be hot inside!
  4. Serve sausages with fruity salad.

Notes

While this salad may look fabulously inventive, it really is a product of using whatever was in the fridge. My husband’s assessment was, “this is very brave, but I think it works!”. You can’t ask for higher praise. Choose whichever sausages you prefer. Pork sausages work well with the apple and nectarines combo. You could also use shaved fennel and orange, but choose whatever is in season and adapt the salad to your sausages. Recipe created by Melissa Hughes for Kidspot and adapted by Kidspot NZ.
