Tuna melts

English muffins topped with tuna, veggies and cheese, all golden and bubbly, make these a delicious hot snack or lunch. We know they're hard to resist but take care not to burn your mouths with impatience!

Ingredients

  • 1 English muffins

  • 185g tin tuna

    strained

  • 3 tbsp mayonnaise

  • ½ cup carrot

    grated

  • ½ cup corn kernels

    tinned or fresh

  • ½ cup tasty cheese

    shredded

  • ¼ cup tasty cheese

    extra, for topping

  • salt and pepper

    to taste

Equipment

  • 1 large bowl
  • 1 griller

Instructions

  1. In a large bowl add tuna, mayonnaise, carrot, corn and 1/2 cup of cheese – stir to combine and season to your liking.
  2. Heat your griller, cut muffins in half and spread with margarine or butter.
  3. Place a heaped tablespoon of mixture on each half.
  4. Add a touch of extra cheese on top and grill until melted and lightly brown.

Notes

Tip
I spread the muffins with margarine so the muffins do not go soggy from the topping.
Variation
Swap or change the vegetables to suit your family if you like.
