Watermelon ice blocks

These frozen fruit-y goodies will cool everyone down on a hot summer day. The colourful layers are a fun change from the standard fruit popsicle flavours.

Ingredients

  • 1 cup water

  • 1 cup sugar

  • 2 sprigs mint

  • 1kg watermelon

    peeled, diced

  • 2 tbsp lemon juice

    fresh

Equipment

  • 1 saucepan
  • 1 wooden spoon
  • 1 small bowl
  • 1 food processor
  • 1 sieve
  • 1 jug
  • 1 ice-block moulds
  • 1 sticks

Instructions

  1. Put water and sugar in a saucepan. Stir with a wooden spoon over medium heat for 5 minutes or until sugar has dissolved.
  2. Add mint and bring the mixture to the boil. Boil, uncovered for 5 mins or until the it thickens to a syrup.
  3. Pour the syrup into a small bowl, remove mint and cool in the fridge.
  4. Place the syrup and watermelon and lemon juice in a food processor and process until smooth. Strain mixture through a sieve into a jug.
  5. Pour mixture into twelve ice-block moulds, insert stick and freeze.

Notes

Tip
Wait until the syrup is completely cold before blending with the fruit to keep the watermelon flavor fresh.
Variation
Try using lime juice instead of lemon for a different citrus twist.
Storage
Keep frozen in their moulds or transfer to a freezer bag once solid for up to 2 months.
