Chicken and haloumi patties

These versatile little chicken and haloumi patties can be enjoyed in so many ways: with salad, wrapped in a flatbread, in a hamburger bun with lettuce and tomato, or on their own in a lunch box with some raw veggies on the side.

Ingredients

  • 500g chicken mince

  • 180g haloumi

    grated

  • 1 zucchini

    grated

  • 1 egg

    lightly beaten

  • ½ cup breadcrumbs

    (45g)

  • 1 tbsp olive oil

Equipment

  • 1 large bowl
  • 1 large non-stick frypan

Instructions

  1. In a large bowl, combine mince, haloumi, zucchini, egg and breadcrumbs. Season well with salt and pepper.
  2. Form into small patties. Refrigerate until ready to cook.
  3. Heat oil in a large non-stick frypan over gentle heat. Cook patties for 4-5 minutes on each side or until cooked through. Remove from pan on to a plate lined with absorbent kitchen paper to take off any excess oil.

Storage
These versatile goodies are delicious warm or cold. They’re also great to eat as reheated leftovers.
