Tortilla stacks

These tortilla stacks are filled with hummus, cheese and ham but have a hunt through the pantry and fridge for other bits and pieces

Ingredients

  • 4 corn tortillas

    gluten-free

  • 2 tbsp hummus

  • ½ cup grated tasty cheese

  • ½ cup shaved ham

  • 1 tbsp vegetable oil

Equipment

  • 1 non-stick pan

Instructions

  1. Spread two tortillas with hummus, top with cheese and ham and then remaining two tortillas.
  2. Heat oil in a non-stick pan over medium heat, cook tortillas stacks one at a time until crispy and golden on both sides and cheese has melted.
  3. Slice into quarters and stack to serve.

Notes

Tip
These stay hot for quite a while, so you could even make them before school pick up and by the time you are home they will be at an edible temperature.
Variation
You can hide all manner of things in these – try pureed cannellini beans instead of the hummus, chopped chicken or pureed pumpkin mixed in with the cheese.
