Ice cream cookie crunch

Great as a party food idea, these ice cream sandwiches use shop-bought cookies and ice cream to make a kiddie favourite. Roll them in choc chips for a decadent dessert or, try sprinkles if you fancy a pretty rainbow affect.

Ingredients

1 packet chocolate chip cookies
3 cups vanilla or chocolate ice cream, slightly softened
mini chocolate chips

Method

Place 1/2 cup ice cream on flat side of one cookie.

Make a sandwich by placing another cookie on top of the ice-cream.

Roll sides of sandwiches in chocolate chips.

Wrap tightly in plastic wrap & freeze for at least 1 hour before serving.

Sprinkles or Hundreds & Thousands can be used in place of choc chips to make a colourful treat!
