Vegetarian chilli

You don't have to have meat in your chilli to make it delicious. This vegetarian chilli is so full of robust flavours that you won't even notice there is no meat in there!

Ingredients

  • 1 onion

    chopped

  • 1 pumpkin

    cubed

  • chilli flakes

    to taste

  • ground coriander

    to taste

  • cumin

    to taste

  • 400g kidney beans

    canned

  • 400g chick peas

    canned

  • 400g corn

    canned

  • 400g chopped tomatoes

    canned

  • 1 cup vegetable stock

Equipment

  • 1 Large pot or pan
  • 1 Knife
  • 1 Cutting board

Instructions

  1. Chop onion and heat until translucent.
  2. Add a good sprinkle of coriander and cumin, add vegetable stock, cubed pumpkin, kidney beans, chick peas and tomatoes. Add a small sprinkle of chilli flakes.
  3. Cook until pumpkin is soft then heat corn through.

Notes

Tip
Serve with a dollop of sour cream and rice.
