Ingredients
1 onion
chopped
1 pumpkin
cubed
chilli flakes
to taste
ground coriander
to taste
cumin
to taste
400g kidney beans
canned
400g chick peas
canned
400g corn
canned
400g chopped tomatoes
canned
1 cup vegetable stock
Equipment
- 1 Large pot or pan
- 1 Knife
- 1 Cutting board
Instructions
- Chop onion and heat until translucent.
- Add a good sprinkle of coriander and cumin, add vegetable stock, cubed pumpkin, kidney beans, chick peas and tomatoes. Add a small sprinkle of chilli flakes.
- Cook until pumpkin is soft then heat corn through.
