Pasta bits with cherry tomatoes and pesto

Ideal for when you need to get dinner on the table in a hurry, this pasta with cherry tomatoes and pesto is super-quick to prepare. Sprinkle with parmesan to serve.

Ingredients

  • 375g packet fresh lasagne sheets

  • 4 tbsp prepared pesto

  • 250g cherry tomatoes

    halved

  • freshly grated parmesan

    to serve

  • 1 large pot
  • 1 colander

Instructions

  1. Bring a large pot of water to the boil.
  2. Rip lasagne sheets into large bite size pieces (this bit is very fun).
  3. Place lasagne bits in pot, return to the boil and cook for 2-3 minutes until al dente.
  4. Drain into a colander, return pasta to the pot and stir through pesto and tomatoes.
  5. Serve garnished with parmesan.

Tip
This is a super quick dish.
Tip
If you have inferior tomatoes, roast them in a bit of olive oil at 180C until starting to collapse, this really intensifies their flavour.
Variation
By all means make it more time consuming (but also more tasty) by making your own pasta and pesto!
Variation
Serve with Italian and fennel sausages.
