Social media star and creative foodie genius Jax Hamilton has teamed up with Best Foods, makers of New Zealand’s favourite mayonnaise, on a mission to make school lunches a fun (and easy) experience for both parents and children, by sharing the ultimate time saving hacks (or Hax!) and delicious recipes.

Lunchtime Hax: At the start of the week, create two to three options of loaded sandwich spreads pulled together with a lick of mayo and butter so you can easily spread on top of any bread option and go.

Ingredients

  • Coronation Chicken

  • 1/2 cup Best Foods mayonnaise

  • 1/3 cup margarine

  • 1/2 tsp garlic salt

  • 1/2 tsp curry powder

  • 300 grams (approx. 1) cooked chicken breast

  • 1/4 cup dried apricots

  • handful fresh parsley leaves

    chopped

  • Tuna Mayo

  • 1/2 cup Best Foods mayonnaise

  • 370 gram tuna (in spring water)

    drained

  • 1/2 cup sweetcorn

  • 1/2 tsp lemon pepper

  • 1 spring onion

    finely chopped

  • 1/2 cup chopped fresh parsley leaves or 1 tbsp dried mixed herbs

  • Cheesy Veggies

  • 1/2 cup Best Foods mayonnaise

  • 1 cup grated cheese

  • 1/2 cup grated carrot

  • 1/2 cup tomato pesto

  • handful basil leaves

    finely chopped

  • Bread rolls

  • 6, 8, or 10 connected bread rolls

    cut through as a whole

  • 1 large bowl
  • 1 whisk
  • 1 forks
  • 1 food processor

Instructions

  1. Coronation Chicken
  2. Whisk together the Best Foods mayonnaise, margarine, salt and curry powder.
  3. Using two forks or in a food processor, shred the chicken
  4. Mix the mayo mixture, chicken, apricots and parsley together.  
  5. Taste and season.
  6. Tuna Mayo
  7. In a large bowl, mix together all the ingredients.
  8. Taste and season with salt and freshly ground black pepper.
  9. Cheesy Veggies
  10. In a large bowl, mix together all ingredients.  
  11. Taste and season with salt and freshly ground black pepper.  

Notes

Hack, slice & go! Grab 6, 8, or 10 connected bread rolls. Cut through as a whole. Fill, top and divide when ready to make lunches. At the start of the week, create 2 – 3 options of loaded sandwich spreads pulled together with a lick of mayo and butter so you can easily spread on top of any bread option and go.
