Chicken wraps

These chicken wraps are the perfect midweek meal. They are quick to prepare and packed full of healthy salad. Cooking the chicken with just a spray of canola oil makes them relatively low in fat as well. You can wrap these in foil and take them on a picnic or wrap a spare for tomorrow's lunch.

Ingredients

  • Canola spray

  • 1kg chicken tenderloins

  • 1 Lebanese pita bread

  • 1 bag mixed lettuce

  • 2 tomatoes

    sliced

  • 1 small container Tabouli

  • 1 small container Hummus

  • 1 small container Tzatziki

Equipment

  • 1 frypan

Instructions

  1. In a frypan, give the base a light spray of canola spray and cook the tenderloins until golden.
  2. Lay the pita bread open and layer the dips and salad. Place the warm chicken tenderloins on top of the salad and tuck the bottom over and wrap.
  3. Use a serviette to hold them together with some string over the top.

Notes

Tip
Be generous with the dips and don’t forget to make one and roll it in foil for lunch tomorrow.
Storage
Roll in foil for next-day lunch.
