Beef tortellini soup

A meal in a bowl! It is the ideal soup and packed full of vegetables. Serve a big bowl with some Italian bread for a complete meal.

Ingredients

  • 2 tbsp olive oil

  • 2 onions

    thinly sliced

  • 2 cloves garlic

    crushed

  • 4 carrots

    peeled and sliced

  • 1 grape tomatoes

    halved

  • 1 zucchini

    quartered and thinly sliced

  • 1 cup tomato paste

  • 2 tbsp beef stock

  • 6 cups boiling water

  • 625g fresh beef tortellini

  • ¼ cup fresh oregano

    chopped

  • 2 bay leaves

    dried

  • 2 cups baby spinach leaves

  • 1 large soup pot

Instructions

  1. In a large soup pot, heat the oil and fry the onion until translucent.
  2. Add the garlic, carrots, zucchini and tomatoes and cook for 3 minutes.
  3. Add the boiling water, stock, bay leaves and oregano.
  4. Return to the boil and pour in the tortellini.
  5. Cook for 15 mins or until the tortellini is cooked.
  6. Stir in the spinach leaves just before serving.

Notes

Tip
This tastes great with a big grating of parmesan cheese just before serving.
Variation
You can use your favourite type of tortellini or filled pasta.
