French toast bites

Ingredients

  • 1 loaf brioche (day-old)
  • 6 eggs
  • 1 1/2 cup almond milk
  • 1 1/2 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 3 tbs coconut oil (for frying)
  • 1/2 cup maple syrup

Method

Using a good bread knife, slice brioche into 2cm thick slices lengthways, then again into cubes.

In a large mixing bowl, whisk together eggs, milk, vanilla and cinnamon. Add bread cubes and soak well; you will need to do this in batches.

In a non-stick frying pan, gently heat the coconut oil until liquid then transfer soaked bread into the pan, cooking until browned and crisp on one side before turning and repeating the other side.

Transfer cooked cubes to a plate lined with paper towel and when cooled a little, either spike onto skewers if serving bigger kids who can be trusted with long, pointed objects, or stack up into a pyramid for those who can’t!

Drizzle with pure maple syrup or honey and serve.
