Veggie fritters

Great if you want to use up veggies in the fridge, these wholesome fritters are wonderful with a rasher of crispy bacon and a poached egg. Use whatever combo takes your fancy for a light lunch or breakfast side.

Ingredients

  • ¼ cup flour

  • 1 egg

  • 2 tbsp milk

  • ¼ cup grated cheese

  • ¼ cup chopped veggies

    e.g., grated carrot, zucchini, potato, finely chopped silverbeet, corn, peas

  • butter or oil

    for cooking

  • 1 Frying pan
  • 1 Mixing bowl

Instructions

  1. Beat together flour and egg with two tablespoons of milk, until it is a reasonably thick, smooth batter (add a little more milk if necessary).
  2. Add cheese and veggies to mixture, combine well.
  3. Heat oil or butter in a mid-heat frypan. Drop tablespoon-lots of fritter mix into pan.
  4. Flip over fritters when bubbles appear on top and bottom is golden.

Notes

Tip
Use a mix of butter and oil to fry the fritters in as it has a higher smoke point.
Variation
Use whatever combo of veggies takes your fancy, such as grated carrot, zucchini, potato, finely chopped silverbeet, corn, or peas.
